TRADITIONAL METHOD How to make sticky rice (Kao Niew) – Add water to your prepared white glutinous rice to wash off the excess starch left there by the milling process.
Rinse that off and do it couple of times.
– Soak the rice for 3-4 hours or overnight up to 12 hours.
– Add water to the steamer pot and boil.
The water level should be about 1.
5-2 inches high.
– STEAM for 25-30 minutes (15 minutes STEAM => FLIP the rice => 10 minutes STEAM) Soak the steamer basket and cheesecloth to get them wet so they will not stick to the rice.
Put the soaked rice in the steamer basket.
When boiling, put it on top of the pot.
Make sure the steamer basket cone doesn’t touch the water.
– After you steam it for 15 minutes, flip the rice as it’s partially cooked and put it back to steam for another 10 minutes.
