Ingredients
- 1 Smithfield All Natural Pork Tenderloin
- 2 small zucchini, thinly sliced
- 3 tbsp bread crumbs
- 1 tbsp Parmesan cheese, grated
- 1 tsp salt
- ⅛ tsp pepper
- 2 tsp olive oil
- 1 small onion, thinly sliced
- 1 garlic clove, minced
Steps
- Cut tenderloin crosswise into ¾-inch slices. Place each slice on its side and flatten with the heel of your hand to ½ inch thickness.
- Combine bread crumbs, Parmesan cheese, salt and pepper in a flat dish and dredge pork slices until coated on all sides.
- Heat olive oil over medium-high heat in a nonstick skillet. Saute pork slices for 2-3 minutes per side, then remove and keep warm. Add onion, garlic, and zucchini to skillet and saute for 5 minutes or until tender.
